Pancakes on the griddle: basic recipe and sweet & savoury variations
Pancakes are very easy to make on the griddle: a hot plate, a small ladle of batter, 2 minutes cooking on each side, and you’re done.
Beyond the classic sweet version, they are also perfect for savoury variations, ideal for surprising your guests.
Savoury pancakes – basic recipe
(about) 15 pancakes)
Ingredients
- 300 g of flour
- 2 sachets of baking powder
- 3 whole eggs
- 60 g of melted butter
- 50 cl of milk
- 5 g of fine salt
- freshly ground pepper
- 1 grated nutmeg
Preparation
In a large bowl, mix the flour and baking powder. Make a well, add the salt, pepper and nutmeg.
Add the beaten eggs, melted butter and a little milk. Whisk, then gradually add the remaining milk until you have a smooth batter.
Cover and leave to rest for 30 minutes.
Savoury griddle pancake ideas
Suggestion 1 – Smoked salmon
Add 60 g of smoked salmon cut into small cubes to the batter. Serve with a cucumber salad with cream and fresh mint.
Suggestion 2 – Scallops
Quickly sauté some scallops with a drop of olive oil and a little garlic (2 minutes). Fold them warm into the batter and serve with a rocket salad.
Suggestion 3 – Prawns or langoustines
Grill some prawn or langoustine tails with olive oil, salt and Espelette pepper (2 minutes). Cut into large chunks, fold into the batter and serve with a salad of baby spinach and apple cubes.
Sweet pancakes – base
Use the same batter by:
- omitting the pepper
- reducing the salt to 2 g
- adding 2 sachets of vanilla sugar
Sweet pancake ideas
Suggestion 1 – Chocolate & hazelnuts
Toast some crushed hazelnuts in a dry pan. Cook the pancakes and, after flipping them, add a spoonful of chocolate spread, then sprinkle with hazelnuts.
Suggestion 2 – Flambéed banana
Grill some banana slices with a little brown sugar and a dash of amber rum, then place them on the pancakes.
Suggestion 3 – Chestnut cream
Top the pancakes with a generous spoonful of vanilla chestnut cream and serve with whipped cream.
