A few original sauce ideas for your griddle
Mayonnaise-based sauces

Lemon & caper mayonnaise
Add lemon juice, then blend with capers. -
Cocktail sauce
Mayonnaise, ketchup and a dash of cognac, all blended. -
Curry mayonnaise
Curry and a little tomato purée, then blend. -
Spicy mayonnaise
Tomato purée and a small amount of chilli purée, blend. -
Roquefort mayonnaise
Roquefort and a little cream, blend lightly. -
Spicy cold American sauce
Cold American sauce and chilli, blend. -
Saffron mayonnaise
Pre-infused saffron and a hint of lemon purée, blend lightly. -
Ginger & chive mayonnaise
Fresh ginger and chives, blend moderately. -
Horseradish mayonnaise
White or red horseradish and a little cream, blend together. -
Quick aioli
Fresh germ-free garlic, olive oil and Cayenne pepper, blend together.

Green mint sauce
Fresh mint, a dash of mint syrup (for colour), add pepper and blend. -
Vanilla & Sichuan pepper sauce
Vanilla and Sichuan pepper, blend lightly. -
Beetroot & shallot sauce
Beetroot, shallot and wine vinegar, blend together. -
Orange & Grand Marnier sauce
Orange slices, Grand Marnier and grenadine, blend together. -
Spiced herb sauce
Turmeric, allspice and dill, blend to your desired texture.
